Mermaid Quay is a waterfront retail and leisure property. The aim is to reduce the CO2 footprint, waste and energy consumption. At the same time, recycling is to be further expanded and, of course, costs are to be reduced.

The new food waste disposal by installing a cooker reduces the quantity, humidity and weight of food waste from restaurants by 70%. Reduced disposal costs and reduced vehicle journeys, as well as reduced service charges, reduced the company's costs from £126,000 to £95,000 per year.
